History of Baja Fresh
Originating in the summer of 1990, Baja Fresh opened its first establishment in Newbury Park of Thousand Oaks, California. They used a newly coined food phrase of “Fresh Mexican Grill,” with the concept being to serve authentic, fresh Mexican style cuisine with a twist. Baja Fresh encourages its customers to eat less and “eat fresh.”
What Makes Them Special?
The extraordinary things about Baja Fresh nutrition are in their style of cooking and preparation methods, as well as their menu selection. Their food is made when you order it, and always by using the freshest ingredients, such as tomatoes, peppers and onions, every day. Uniquely designed with their own salsa bar, each chain is kept clean and brightly lit. They offer plenty of seating and friendly service.

Baja Fresh serves burritos, soft tacos, nachos, tostadas, quesadillas, fajitas, with a choice of many side dishes as well.
Some of the dishes from Baja Fresh are quite popular, such as the “burrito mexicano”: a burrito consisting of a choice of chicken, pork or steak. It also contains black or pinto beans, rice, onions, cilantro and whatever salsa you choose.
One of my favorite “fast food” restaurants, Baja Fresh offers great tasting, healthy food that is made just the way you want it. They allow you to make your own combinations to fit your nutrition requirements. For the carb-conscious, there is the Mango Chipotle Salad without the shell. It has romaine lettuce, chicken, avocado, cheese, mango salsa and chipotle glaze. Another option is the Baja Ensalada salad with Chicken (forgoing the tortilla strips and dressing). It contains lettuce, tomatoes, cheese, Pico de Gallo and grilled chicken.
If you’re looking for vegetarian fare, there’s the Grilled Veggie Burrito, stuffed with grilled peppers, chilies and onions, your choice of black or pinto beans, cheese, lettuce, Pico de Gallo and sour cream. There is even a children’s menu offering mini meals of the most popular items. They serve bean and cheese burritos, taquitos and nachos. Each kids meal comes with rice, applesauce, chips and a drink.
Finally, for those wanting low fat fare, there are selections such as the Baja-style Taco (shrimp or chicken being your best bet), on a corn tortilla. Ordering many choices with chicken and holding off on the fatty sides or dressing or cheese will keep your choices healthier.
Baja Fresh does not use frozen or processed food; nor do they use microwaves. Nothing is reheated, and produce comes in small batches daily, to ensure quality product. Baja Fresh nutrition has higher quality standards in the way they think fast food should be than compared with most other fast food chains, with every individual’s dietary needs in mind, and all with the very freshest of ingredients.
