The coconut, classified as a drupe and not a nut, is the fruit of the coconut palm and is the largest seed known. Coconut water is the clear liquid that pours out of the coconut when opened. It is a natural isotonic drink used to rehydrate the body and is similar to human plasma (blood). Coconut water is low in sugar and calories, has very little fat, and has no cholesterol.

• Coconut water is naturally sterile because, as the coconut forms, its water is purified when passing through the fibrous husk. It takes about nine months to filter a liter of water.
